CHEF DE CUISINE - JAPANESE

We have an exciting opportunity for a Chef de Cuisine Japanese to join Cinnamon Life Integrated Resort, the much anticipated 1 billion USD project, opening in late 2024. Cinnamon Life Integrated Resort is a part of Cinnamon Hotels & Resorts, Sri Lanka's largest Hotel owner with a portfolio of 15 Hotels and Resorts in Sri Lanka and the Maldives. It is a member of John Keells Holdings PLC, one of the largest listed conglomerates in Sri Lanka.

Reporting to the Executive Sous Chef, you will spearhead the creation of our culinary masterpiece, the one-of-its-kind, authentic Japanese restaurant, nestled within Cinnamon Life Integrated Resort. Your expertise will play a pivotal role in creating an unparalleled dining experience that transcends the ordinary, where your passion for crafting authentic Japanese flavours and your natural flair for innovation, will shape a dining experience that truly redefines excellence.

You will be instrumental in creating and curating an authentic Japanese culinary menu, considering seasonal variations and guest preferences. As you oversee the day-to-day operations of the Japanese kitchen, your focus will be on upholding impeccable standards of food quality, presentation, and consistency, aligning seamlessly with the Hotel's culinary guidelines and the rich traditions of Japanese cuisine. Crucial aspects of your responsibilities include effective inventory management, seamless collaboration with other kitchen departments and providing comprehensive training to kitchen staff in Japanese culinary techniques. Beyond ensuring the high standards of Japanese culinary excellence, you will actively be involved in cost control measures. You will analyze revenue trends and reservation projections for the outlet, taking corrective measures whenever necessary to ensure optimal financial performance. In addition to upholding health and safety compliance, you will be actively engaging with guests to elee their dining experience. Introducing innovations and orchestrating catering for special events are pivotal components of this dynamic position.
